POMEGRANATE QUINOA SALAD

WHAT YOU NEED
1 cup uncooked red quinoa
1 romaine lettuce or iceberg lettuce
4 cucumbers
2 green onions
¼ bunch parsley
1 cup pomegranate

DRESSING
Olive oil
Lemon juice
Salt
INSTRUCTIONS
Cook 1 cup of red quinoa (after washing it). 1 cup of the quinoa needs 1 ½ cup of water. Meanwhile, finely cut the lettuce, cucumbers and green onions to small cubes. Mix them with the cooked red quinoa (when cooled). Prepare the dressing on the side then toss it over and mix well. Add in the pomegranate and parsley with the salad or just place them on top.
