⁣To all the moms out there, you did it and you’re still doing it! You’re doing an amazing job whether you are a working mom, or a stay at home mom. ⠀

2020 was a tough year on all of us! At times, we felt overwhelmed, anxious, and worried. Other times, we found encouragement to maintain peace and sanity at home. But yet again, we managed! Our time spent with our kids was precious, and that is something we will always remember. We enjoyed their craziness, their messy art, their ongoing questions, their silly smiles .. it was all totally worth it! ⠀

2021 may not be very different from 2020. But YOU certainly are. You discovered you are stronger than you ever thought possible. You learned about the skills and talents you never knew were inside of you. ⠀

I am taking a day off today from EVERYTHING but my Nadeem! ⠀
⠀
Go and spend the day with your kids, act silly, connect with them, hug them, cuddle, laugh, eat, .. and let go of everything!⠀

⁣I decided to shake things up and try a new kind of breakfast for my son. This classic açai bowl combines a variety of nutritious foods to create a colorful breakfast or even snack that he can’t get enough of! ⠀

Who can resist something so colorful? Dark purple colour, lovely ice-creamy texture, refreshing and sweet, but filling. All in all this is a really tasty and feel-good breakfast.⠀

With a passion for healthy cooking and having met Yasmina along my journey, we came to realize that in our schools we not only lack proper education about healthy eating habits, but those with life-threatening food allergies get to suffer the most. So we decided to create allergy-friendly lunchbox recipes that contain all proper nutrients yet surprisingly delicious!⠀⠀

VEGAN ZAATAR MUFFINS:⠀⠀
Dairy-free, egg-free, sesame-free, nut-free⠀⠀
⠀⠀
Serving: 12 mini muffins⠀⠀
- Calories per piece: 140 calories⠀⠀
- The lunchbox consists of: 3 muffins + 3/4 cup blueberries + 1 cup cucumber + 1 cup cherry tomatoes⠀⠀
⠀⠀
Ingredients:⠀⠀
* 120 mL olive oil ⠀⠀
* 1 TBSP coconut sugar⠀⠀
* 1/3 cup whole-wheat flour⠀⠀
* 1/3 cup sesame-free zaatar⠀⠀
* 1 TBSP dried mint⠀⠀
* 1 TSP baking powder⠀⠀
* 1 TSP baking soda * 2 TBSPs egg replacers mixed with 4 TBSPs water⠀⠀
* 1/2 cup coconut yogurt⠀⠀
* Pinch of Himalayan salt ⠀⠀
⠀⠀
Instructions:⠀⠀
1- Stir all ingredients together until smooth. ⠀⠀
⁣2- Transfer the batter to a muffin pan.⁣⠀⠀
3- Bake for 20 minutes at 180°C.⠀⠀
⠀⠀
