LEMON SORBET

I had this at my sister’s wedding and I just fell in love. I couldn’t wait to go back home to try to make it. It is sooo refreshing, satisfying and delicious! It is great for cleansing your palate after a meal.

WHAT YOU NEED

1 lemon’s peel, grated
1½ cup water
¼ – ½ cup brown sugar
½ cup lemon juice

INSTRUCTIONS

In a saucepan, stir together the grated lemon peel, 1 cup of water and the brown sugar. Bring to a boil, then reduce heat to medium and simmer for 5 minutes. Remove from the heat and allow it to cool.

In a bowl, stir together the lemon syrup with peel, lemon juice and ½ cup of water.

Freeze it in a tall canister. Freeze for 1½ hour. Then remove and stir with a whisk. Return to the freezer and stir about once every house for about 4 hours. The more times you stir, the more air will be incorporated, resulting in a lighter finished product. [If you like it sweet, then use ½ cup of sugar.] This yields around 3 servings.
