WHAT YOU NEED
½ head of lettuce
1 green bell pepper
1 cucumber
1 small red onion
2 cups corn
2 scallions
10 pieces cherry tomatoes
Handful coriander
DRESSING
1 avocado
1 teaspoon garlic powder
½ teaspoon salt
¼ – ½ cup olive oil
2 teaspoons dried cilantro
¼ cup lemon juice
INSTRUCTIONS
Cut the lettuce, cucumber, green bell pepper to cubes (it looks prettier to me), and the red onion to smaller cubes. Halve the cherry tomatoes and cut the scallions round. Pick the coriander leaves and leave as is. Mix all in a large bowl (don’t forget the corn). Then add all dressing ingredients to a blender and blend until smooth. Add the dressing in the bowl and mix well. Enjoy and Bon Appétit!
