WHAT YOU NEED
2 cups cooked white quinoa
4 cucumbers
2 tomatoes seeded (peeled)
1 ½ bunch parsley
2 green onions

DRESSING
Olive oil
Lemon juice
Himalayan pink salt
INSTRUCTIONS
Finely cut the parsley, cucumbers, tomatoes and green onions to small cubes. Mix them with the white quinoa (when cooled). Prepare the dressing on the side then toss it over and mix well. I like to add the salt directly onto the salad. Enjoy and Bon Appétit!
