WHAT YOU NEED
1 teaspoon coconut oil
1 small onion, diced
1 small tomato, diced
1 green bell pepper, diced
4 mushrooms, diced
4 eggs
Salt & black pepper

INSTRUCTIONS
Pre-heat the oven at 220°C. Melt the coconut oil and cook all ingredients together (onions first). Meanwhile, beat the eggs, adding salt and black pepper. When the vegetables are done, add them to the beaten eggs and place in a small triangular cake pan. Cook until done. Enjoy and Bon Appétit!
