OLIVES PIZZA

Try it out: a simple topping for this easy, bite size, homemade pizza. The dough can be prepared ahead of time, and can even be placed in the freezer.

Olives pizza

WHAT YOU NEED

Dough recipe

6 cups brown flour
1 cup powdered milk
1 cup extra virgin olive oil
3 tsps instant yeast
3 tsps sugar
1 tsp salt
2-3 cups lukewarm water

Pizza sauce recipe

2 big onions, chopped
1 garlic clove
Oregano
4 tbsps tomato paste

Olives topping recipe

1 bunch green thyme
Sumac
4 spring onions, finely chopped
Seeded green olives

INSTRUCTIONS

Prepare the dough by mixing all the ingredients together (I usually don’t add the sugar). Let the dough rest for at least an hour in a warm place. Meanwhile, prepare the pizza sauce. Put some olive oil in a pot and add the onions and garlic, adding some oregano. Cook until they are soft then add the tomato paste and a little water and let boil. The texture has to be thick.

To prepare the olives topping, mix in a bowl the green thyme, sumac, spring onions, green olives and add some extra virgin olive oil.

When the dough is ready, roll it out into the desired shape. Place on top the pizza sauce then the olives topping. Line a baking sheet pan with parchment paper. Transfer the olives pizza to the prepared baking sheet pan (preheated oven at 200°C). Enjoy and Bon Appétit!
