1 cup & 2 tablespoons flour
1 cup grated carrots
1/3 cup agave syrup
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
¼ cup olive oil
1 teaspoon pure vanilla extract
1 cup almond milk




Preheat oven to 180°C. In a large bowl, mix the dry ingredients together (flour, baking powder, baking soda, cinnamon). In a separate bowl, mix the wet ingredients (agave syrup, olive oil, milk, vanilla extract). Pour the wet into the dry and then add the grated carrots. Mix well and pour batter into the prepared cupcake pan. Bake in the preheated oven until a toothpick inserted in the center comes out clean. Enjoy and Bon Appétit!
